How to Choose a Loose Leaf Green Tea

Green tea is heated soon after picking to stop it oxidizing, which keeps it fresh, grassy and lighter in caffeine than black tea. How it is heated, how the leaf is shaped and whether anything is added make all the difference to the cup.

How to Brew Green Tea

Water temperature

170–185°F, never boiling. Let boiling water rest 2–3 minutes if you have no thermometer. Sencha likes it a little cooler, 160–175°F.

Steep time

2–3 minutes (sencha 1–2). Taste early: long steeps are the main cause of bitter green tea.

Iced

Cold brew 2 tablespoons in 32 oz of cold water in the fridge for 6–8 hours. Smooth, sweet and never bitter.

Matcha

Whisk ½–1 teaspoon into 2–3 oz of 170–180°F water until frothy, then top with water or milk.

Good to Know

  • Caffeine: green tea has roughly 20–45 mg per 8 oz cup, less than black tea. Matcha has more, because you drink the whole leaf.
  • Bitter cup? Use cooler water and a shorter steep, and add more leaf rather than more time.
  • Storage: keep green tea sealed, away from light, heat and strong smells, and enjoy it within a few months of opening.

What is the difference between green tea and matcha?

Regular green tea is steeped and strained. Matcha is shade-grown green tea ground into powder and whisked, so you drink the whole leaf. It tastes richer and has more caffeine.

Why is my green tea bitter?

Almost always water that is too hot or a steep that is too long. Try 175°F for 2 minutes.

Sencha or gunpowder: which should I choose?

Sencha for a light, grassy, crisp cup; gunpowder for a fuller, toastier, slightly smoky one.

Which green tea is best iced?

Jasmine and gunpowder both make excellent iced tea, especially cold-brewed.
